refactor: remove unreliable performance tests
Remove environment-dependent performance tests that use arbitrary
time thresholds. These tests are flaky in CI and don't provide
meaningful assertions.

Refactored audit logs for save/delete tenant profile operations;
moved setDefaultTenantProfile to the service layer;
added Awaitility-based audit log checks in controller tests;
allowed SYS_ADMIN access to audit endpoints;
made BuildProperties optional with version fallback;
used tenantAdminUser in updateDefaultTenantProfile;
updated logging config for audit debugging.
